SOTO MADURA


SOTO MADURA


Bahan:
250 gram daging ayam rebus, suwir (atau 250 gram daging sapi diiris )
5 butir telur rebus, iris
250 gram kentang rebus, iris
100 gram tauge, buang akarnya lalu cuci bersih, siram dengan air panas
5 ikat daun bawang, iris
1 batang serai, memarkan
5 batang daun seledri, iris halus
jeruk nipis
bawang goreng
Bumbu yang dihaluskan:
3 butir bawang merah
2 siung bawang putih
5 buah kemiri
1 ruas jari jahe
1 ruas jari lengkuas/laos
1 sdt merica
garam secukupnya


Cara Membuat:
Rebus ayam/daging sapi dengan air secukupnya sampai matang. Angkat, suwir daging ayam atau iris daging sapi. Sisihkan.
Masukkan bumbu yang telah dihaluskan bersama dengan serai ke dalam kaldu ayam/daging. Masak hingga kuah mendidih, angkat.
Ketika siap dihidangkan, tata dalam mangkok, irisan telur, kentang, tauge dan suwiran ayam/potongan daging. Siram kuahnya, taburi irisan daun bawang, seledri dan bawang goreng. Hidangkan bersama sambal soto dan irisan jeruk nipis.
Untuk 4-5 orang
