KAMBING GULING (INDONESIAN GRILLED GOAT RECIPE)


1 young medium goat, discard the head, foot, the bowel and his skin

1/4 kg coriander powder

1 tea spoon fine nutmeg

1 tablespoon powdered pepper

1/4 kg refined garlic

2 tablespoon salt

1 bottle sweet soy sauce

150 gr palm sugar

100 ml cooking oil

250 ml English soy sauce


Sauce:

1/2 bottle sweet soy sauce

200 gr shallot, sliced

1/2 kg tomatoes were cut off into small boxes

1/4 kg small green chilli, thinly sliced

10 lime

30 sheets lime leaves without its middle stick


How to make:


  • mix all the spice material, stirred well.

  • Smear all the surface of the goat and in the goat thoroughly and leave it for one hour so that the spice penetrates.

  • Grill the goat with the distance 40 cm

  • smear the goat while grilled with the remaining spice.

  • served with mashed potatoes and sauce

SOTO MADURA (MADURA SOUP)


250 gr boiled chicken, thinly sliced or shredded(or beef, thinly sliced)

5 boiled egg, sliced

250 gr boiled potato, sliced

100 gr bean sprouts, discards the roots, washed clean, and pour with hot water

5 bunches leek, chopped

1 stick lemon grass, bruised

5 rods cellery leaves, thinly sliced

citrus fruit

fried onion



Refined Spice:


3 items shallot

2 garlic fangs

5 candlenuts

1 ginger knuckle

1 knuckle lengkuas/galingale

1 tea spoon adequate salt pepper


How to make:


  • Boil the chicken/beef with adequate water until ripe. Adopted, shredded chicken or the slice of beef. Eliminated.

  • Put the spice that was refined together with lemon grass in chicken broth/meat. Cooked until broth boiled, adopted.

  • When being ready to be served, arrange the egg, the potato, the bean sprouts and shredded chicken/beef. Pour his broth, scattered the slice of the leek, celery and the fried onion. Serve together with chilli sauce and the slice of the citrus fruit. For 4-5 people.
